Description

Abstract - Foodstuffs require proper storage equipment such as a refrigerator, freezer, or cold storage, this depends on the foodstuffs stored.
Refrigerator storage can reach 10 °C - 15 °C is used to store vegetables, fruit, drinks, food, which must be displayed and served cold. The purpose of
this study was to determine the effect of storage duration of jackfruit (Artocarpus heterophyllus Lamk) in the refrigerator against alcohol levels. This
type of research is experimental, the number of samples was 25 jackfruit with 5 treatments. The results showed that the alcohol content in the sample
of jackfruit (Artocarpus heterophyllus Lamk.). The longer the time the jackfruit is stored in the refrigerator, the higher the alcohol content in the
jackfruit. After obtaining normally distributed data, it can be continued by conducting an anova test. In the ANOVA test, the value of F = 4.658 was
obtained with a significant value of 0.008, where the value was <0.05, then Ha was accepted and Ho was rejected, meaning that there was an effect
of the length of storage of nangka fruit (Artocarpus heterophyllus Lamk) on alcohol content.

Abstrak- Bahan makanan memerlukan peralatan penyimpanan yang tepat seperti kulkas, freezer, atau cold storage, hal ini tergantung dari
bahan makanan yang disimpan. Penyimpanan lemari pendingin mampu mencapai 10°C - 15 °C digunakan untuk menyimpanan sayuran, buah,
minuman, makanan, yang harus di display dan disajikan dingin.Tujuan penelitian ini untuk mengetahui” Pengaruh lama Penyimpanan Buah Nangka
(Artocarpus heterophyllus Lamk) Pada Lemari Es Terhadap Kadar Alkohol”. Jenis penelitian ini adalah eksperimental, jumlah sampel ada 25 buah
nangka dengan 5 kali perlakuan.Dari hasil penelitian menunjukkan bahwa, kadar alkohol pada sampel buah nangka (Artocarpus heterophyllus
Lamk). Semakin lama waktu penyimpanan nangka di lemari pendingin, maka semakin tinggi kadar alkohol pada buah nangka.Setelah didapatkan
data terdistribusi normal, maka dapat dilanjutkan dengan melakukan uji anova. Pada uji anova diperoleh nilai F = 4,658 dengan nilai signifikan 0,008
yang dimana nilainya <0,05, maka Ha diterima dan Ho ditolak berarti ada pengaruh lama penyimpanan buah nagka (Artocarpus heterophyllus Lamk)
terhadap kadar alkohol.
